I created MAMO’S Garlic Sauce in 1991 to put on a pork loin roast for a family Thanksgiving dinner I catered. After that, I continued to cook with it, as well as serving it as a dip at our poker parties,  family get-togethers, evenings with friends, and just hanging out at home. My husband, Brian,  encouraged me to share it with the world, and our family and friends wholeheartedly agreed.  

In March 1995, we introduced it at Quality Seafood, a specialty market in Austin, Texas, where it  became an overnight sensation. It was so incredibly popular that the local Whole Foods, Central  Market and H.E.B. picked it up immediately. Brian found us a small 500 sq. ft. kitchen at The  Farmer’s Market on Burnet Road. (This was way back in the Hill Rylander days.)  He ordered jars, found bulk ingredients, set up a semi-automated process for jarring, and enlisted the  help of my father, a C.P.A. and entrepreneur. In September of 1995, the head chef at the University of  Texas’ Culinary Department began using MAMO’S Garlic Sauce for an added zest to his fabulous  creations. In September, 1996, our daughter, Kevin Marley Dean was born. By 1997, we were granted a patent on our process, and MAMO’S Garlic Sauce was available in over 650 grocery outlets across  the country, including Safeway, Randall’s, Albertson’s, Bread and Circus, Wheatsville Food Coop, Sun  Harvest, and many others from coast to coast. (See stores here.) By mid 1999, we had grown into a  4,000 sq. ft. facility, and had formed our own distribution company, PITA Distributing. (It was really 

small – we only had one truck.) PITA Distributing delivered MAMO’S Garlic Sauce all over the  country because, as a single item vendor, distributors were unwilling to carry our product.

Why MAMO's

I get asked this question all of the time. As the first born grandchild on both sides, I had the privilege of bestowing my grandparents with their monikers, and I “chose” Mamo for my maternal grandmother. When Brian and I were trying to decide what to name my sauce, I came up with some real stinkaroonies (see list here), but luckily, he suggested naming it after Mamo, since I both came up with her moniker and created the garlic sauce. (Whew!) We gave her a call and she was thrilled; thus, voila! MAMO’S Garlic Sauce became official.

SO WHAT HAPPENED? WHERE DID MAMO’S GO?

Even though MAMO’S Garlic Sauce was rockin’ and rollin’, in late 2000 all of the large grocery stores across the country unfortunately decided to start using distributors only, instead of allowing individual vendor delivery (DSD). Since we no longer had our large grocery store accounts, and were only being sold in small specialty stores across the country, we were compelled to pull the product off of the shelves entirely.
I have never felt the desire to try to make a bunch of different products just so distributors would carry me. My creation of MAMO’S Garlic Sauce was completely serendipitous; I never contemplated creating other products just to add to our existing ONE. Hell, I didn’t even mean to sell this one, but Brian’s tenacity won.
Over the last 20 years, fans of MAMO’S continued to inquire about the sauce. As the years went by, it looked like MAMO’S was going to be just a super groovy memory. Then, the game changed!!!!! Now, we have the internet; Farmers Markets are ubiquitous; we have healthier choices; and, we all have a better understanding of eating healthy and sourcing locally.
But then, a couple of years ago, Brian left this world. After 36 years of marriage and partnership, I did not really know what to do without him. So, I decided to honor his legacy. In September 2018, my (now) business partner and all together BFF, Kristy Glomb, told me about a boutique gourmet store in Lockhart, Texas – The Culinary Room. We introduced the product to the owners (of Culinary Cowgirl
Queso fame); they absolutely loved it and were thrilled to carry it. While sampling MAMO’S out at the store, the owners told me about black (fermented) garlic. I had never heard of it before, and was excited to try it in my recipe. UNBELIEVABLE!!!!! I would have never imagined that just switching out garlic would result in such a fabulous, savory, and richly layered sauce! It tasted totally different than my original creation. Voila! A new (serendipitous) product! It was so exciting.
Kristy and I have been partners ever since, in round two of my adventure. Our company is committed to providing the world’s tastiest, healthiest, and all natural garlic sauce, and making it easily available to fans of MAMO’S. ENJOY – But remember, CAUTION: The more you eat, the more you eat!

Brian, with his incessant nagging, and his procurement of everything we needed, was the impetus behind the product. Unfortunately, he left this world before I found out about black garlic; I know he would have been more than thrilled about our new MAMO’S Black Garlic Sauce!
