MAMO’S Black Tasty Tomato Soup
- 6 cups fresh tomatoes
- 1 leek, chopped
- 1 quart vegetable broth (or bone or chicken broth)
- Salt to taste
- Freshly ground black pepper to taste
- 2 tablespoons butter
- 2 tablespoons flour
- 4 Tbs. MAMO’S Black
Place tomatoes, leeks and broth in a large soup pot. Bring to a boil and then reduce heat to low and let simmer 20 minutes until the tomatoes burst and the onions are soft. Season with salt and pepper. Transfer mixture in batches to a blender, and puree until smooth.
Heat butter in another large soup pot over medium heat. Add flour, whisking until mixture turns golden brown. Season with salt and pepper. Whisk some of the pureed tomato soup into butter-flour roux. Stir in MAMO’S Black, add the rest of the soup, and heat until tomato soup thickens.
Ladle the soup into bowls, and serve, garnished with chopped fresh basil, or basil micro greens.
